SERVES 4 READY IN ABOUT 15 MINUTES
250g dried udon noodles
450g rump, sirloin or fillet steak, all visible fat removed, thinly sliced
2 garlic cloves, finely chopped
1 red chilli, deseeded and finely chopped
2 large carrots, peeled and thinly sliced lengthways
200g pak choi, thickly sliced
4 tbsp dark soy sauce
A large handful of fresh coriander, roughly chopped
1 Boil the noodles according to the packet instructions, then drain and set aside.
2 Meanwhile. place a large frying pan sprayed with Frylight over a high heat. Stir-fry the steak, garlic and chilli for 2-3 minutes, or until the steak is cooked and browned all over. Remove from the heat, transfer to a plate using a slotted spoon and set aside.
3 Clean the pan with kitchen paper and spray with more Frylight. Stir-fry the carrots for 2 minutes, then add the pak choi and cook for another 2 minutes. Add the beansprouts and cook for 1 minute more.
4 Mix in the cooked noodles, steak and any juices on the plate, then the soy sauce and 4 tbsp water. Stir-fry for 1 minute, until hot through. Stir in the coriander and serve.
