SW recipe: Sticky pork stir fry

Ingredients:

500g lean pork fillet (tenderloin), visible fat removed

400g mixed exotic mushrooms, such as shiitake, oyster and enoki, sliced (you can use regular mushrooms, too)

8 spring onions, each cut into 3 pieces

200ml hot vegetable stock

4 level tbsp teriyaki sauce

Method:

1 Spray a large, non-stick wok or frying pan with low-calorie cooking spray and place over a medium-high heat. Cut the pork into strips or chunks, add half to the pan and fry for 2-3 minutes, or until cooked through. Transfer to a bowl and keep warm while you cook the remaining pork.

2 Spray the wok or frying pan with more low-calorie cooking spray, add the mushrooms and stir-fry for 3 minutes. Add the spring onions and stir-fry for 1 minute.

3 Add the pork, pour in the stock and bubble until reduced by half. Stir in the teriyaki sauce and heat through. Divide between 4 plates to serve.
