SW recipe: Stroganoff baked potatoes

Ingredients

4 baking potatoes

1 onion, finely sliced

250g chestnut mushrooms, quartered

1 green pepper, deseeded and thinly sliced

2 tsp smoked paprika

2 garlic cloves, crushed

250ml beef stock

1 tbsp Worcestershire sauce

Low-calorie cooking spray

400g lean beef frying steak, visible fat removed, cut into strips

3 tbsp fat-free natural fromage frais

15g fresh flat-leaf parsley, roughly chopped

200g green beans, trimmed

Method

1 Preheat your oven to 220°C/fan 200°C/gas 7. Pierce the potatoes all over with a fork, then microwave on high for 5 minutes. Transfer to a non-stick baking tray and bake for 30 minutes, or until golden and cooked through. If you don’t have a microwave, bake the potatoes for 1 hour.

2 Meanwhile, put the onion, mushrooms, pepper, paprika, garlic, stock and Worcestershire sauce in a large, deep frying pan. Bring to a simmer over a medium-high heat. Season and cook for 30 minutes, stirring occasionally.

3 When the stroganoff has around 10 minutes to go, spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Once hot, add the beef and fry for 1-2 minutes on each side, or until coloured. Add to the stroganoff for the last 3-4 minutes of cooking time.

4 Turn off the heat, leave the stroganoff to stand for 2 minutes, then stir in the fromage frais and half the parsley. Meanwhile, boil the beans for 2-3 minutes, then drain. Divide the potatoes between 4 bowls or plates with the beans and slice open. Spoon over the stroganoff and top with the remaining parsley.
