Low-calorie cooking spray
2 red onions, diced
3 celery sticks, sliced
1 red pepper, deseeded and roughly diced
4 garlic cloves, crushed
2 x 400g cans chopped tomatoes
2 tbsp white wine vinegar
2 tsp dried oregano
2 tsp smoked paprika
250g fresh or frozen baby broad beans
400g can cannellini beans, drained and rinsed
12 frozen Slimming World Syn-free Pork Sausages
Roughly chopped fresh flat-leaf parsley, to serve
1 Spray a deep, non-stick frying pan or flameproof casserole dish with low-calorie cooking spray and place over a low heat. Add the onions and cook for 8-10 minutes until softened. Add the celery, pepper and garlic and cook for a further 3 minutes.
2 Stir in the tomatoes, vinegar, oregano and paprika. Rinse out each empty can of tomatoes with half a can of cold water and pour this into the pan or dish. Simmer for 20 minutes, adding the beans for the final few minutes.
3 Meanwhile, cook the sausages according to the pack instructions. Halve diagonally.
4 Stir the sausages into the stew. Sprinkle over the parsley and season. Ladle into 4 bowls.
TO PREP AHEAD
In step 2, simmer for 20 minutes, then remove the pan from the heat, season and stir in the beans. Leave to cool, then chill for up to 24 hours, or freeze for up to 1 month. When you’re ready to serve, reheat on the hob (defrosting thoroughly first if frozen) until piping hot and continue with steps 3 and 4
