SW recipe: SW Chicken fried rice

Ingredients

100g dried rice

Low-calorie cooking spray

2 large skinless and boneless chicken breasts, cut into small chunks

200g mushrooms, sliced

200g savoy cabbage, finely shredded

1 red pepper, deseeded and sliced

3 tbsp soy sauce

Juice of 2 limes, plus 1 lime sliced into wedges to serve

1 garlic clove, crushed

1 red chilli, deseeded and finely diced, reserving some to serve

5cm piece fresh root ginger, grated

2 medium eggs, beaten

10g fresh coriander, leaves roughly chopped, reserving some to serve

Method

1 Cook the rice according to the pack instructions, then drain and leave to steam-dry. Meanwhile, spray a large, non-stick frying pan or wok with low-calorie cooking spray and place over a medium heat. Stir-fry the chicken for 4-5 minutes, remove from the pan and set aside.

2 Add the mushrooms to the pan and gently stir-fry for 5-8 minutes, or until starting to soften. Add the cabbage, pepper and 100ml water, and cook for 2-3 minutes.

3 Return the chicken to the pan with the cooked rice and stir-fry for 2-3 minutes. Add the soy sauce, lime juice and 100ml water. Stir-fry for 2 minutes, then add the garlic, chilli and ginger.

4 Scrape everything over to one side of the pan and pour the eggs into the other side. Scramble the eggs for 2 minutes, then stir through the rice mixture. Stir-fry for a further minute, or until everything is cooked through. Stir through the coriander, then divide between 4 bowls. Sprinkle over the reserved chilli and coriander and serve with the lime wedges.
