SW recipe: SW Chicken tikka masala

Serves 4

200g fat-free natural yogurt, plus 4 tbsp

Juice of 1 lime, plus wedges to serve

4 tbsp tikka curry powder

4 skinless and boneless chicken breasts, cut into bite-size chunks

3 peppers, deseeded and cut into bite-size chunks

Low-calorie cooking spray

1 onion, finely chopped

4 garlic cloves, crushed

1cm piece fresh root ginger, peeled and grated

1 red chilli, deseeded and finely chopped

120g tomato purée

200g passata with garlic

300ml hot chicken stock

1 cinnamon stick

½ cucumber, peeled, deseeded and chopped

½ red onion, finely sliced

Fresh coriander sprigs, to serve

Cooked dried basmati rice, to serve


1 Mix 200g yogurt with the lime juice and half the curry powder in a large, glass or stainless-steel bowl, and season. Add the chicken and peppers, and toss to coat. Cover and leave to marinate in the fridge for 6-8 hours, or overnight if you can.

2 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the onion and stir-fry for 5 minutes. Add the garlic, ginger, chilli, remaining curry powder and a large splash of water, and stir-fry for a further 3-4 minutes until fragrant. Add the tomato purée, passata, stock and cinnamon stick. Bring to the boil, then reduce the heat to low and cook gently for 20-25 minutes, stirring often.

3 Meanwhile, preheat your grill to medium-high. Thread the chicken and peppers onto 8 metal skewers and spoon over any leftover marinade. Spray with low-calorie cooking spray and grill for 15 minutes, turning occasionally, or until the chicken is cooked through.

4 Mix the cucumber and red onion in a bowl and set aside. Remove the sauce from the heat, discard the cinnamon stick and stir in 4 tbsp yogurt. Slide the chicken and peppers off the skewers and into the sauce. Scatter over the coriander and serve with the cucumber salad, lime wedges and rice.
