SW recipe: Sweet and sour chicken skewers

Ready in 25 minutes

INGREDIENTS

  • ½ tbsp tomato purée
  • ½ tbsp dark soy sauce
  • ½ tbsp white wine vinegar
  • ½ level tsp sweetener granules
  • A pinch of garlic salt
  • ¼ tsp Chinese five-spice powder
  • 1 large skinless and boneless chicken breast, cut into bite-size chunks
  • Low-calorie cooking spray
  • 100g prepared fresh pineapple, cut into bite-size chunks
  • 1 large red pepper, deseeded and cut into bite-size chunks
  • 4 spring onions, cut into short lengths
  • Shredded celery, to serve

METHOD

Mix the tomato purée, soy sauce, vinegar, sweetener, garlic salt and five-spice powder in a bowl. Stir in the chicken.

Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Lift the chicken chunks out of the marinade, shake off the excess and fry for 10 minutes, turning them now and then until cooked through.

Add the remaining marinade to the pan, increase the heat slightly and allow the mixture to bubble and glaze the chicken for another 3-4 minutes (the extra marinade needs to be completely cooked). Transfer to a plate and leave to cool.

Thread the chunks of chicken, pineapple, red pepper and spring onions on to 4 skewers.
