Serves 4 Ready in about 30 minutes
2 x 340g cans sweetcorn, drained and rinsed
50g roasted red peppers in brine from ajar, drained and finely chopped
1/4 tsp paprika
2 large eggs, beaten
4 level tbsp cornflour
1/2 level tsp baking powder
4 spring onions, thinly sliced, plus extra to serve
Low-calorie cooking spray
2 bunches asparagus spears
8 bacon medallions, visible fat removed
1 Preheat your oven to 220°C/fan 200°C/gas 7. Tip half the sweetcorn into a food processor and blend until pureed. Pour into a large mixing bowl, season and stir in the remaining sweetcorn along with the peppers, paprika, eggs, cornflour, baking powder and spring onions.
2 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add 4 large spoonfuls of the sweetcorn mixture, spaced well apart, and cook for 2 minutes on each side until golden and cooked through. Remove from the pan, cover loosely with foil and keep warm while you repeat twice more to make 12 fritters.
3 Meanwhile, spread the asparagus, in a non-stick roasting tin in a single layer. Spray with a little low-calorie cooking spray and roast for 5 minute. Lay the bacon over the asparagus and roast for a further 5 minutes. or until the bacon is cooked through,
4 Divide the fritters, bacon and asparagus between 4 plates. Scatter over the extra spring onion and add a twist of black pepper to serve.
