800g new potatoes, thinly sliced
Low-calorie cooking spray
1 onion, finely sliced
2 garlic cloves, crushed
180g lean cooked ham, visible fat removed
10 medium eggs, beaten and seasoned with pepper
1 spring onion, finely sliced, to serve
Boil the potatoes for 6-8 minutes until just tender. Drain and set aside.
Meanwhile, spray a 23cm non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and garlic with a splash of water, season and fry for 5 minutes, stirring frequently. Add the ham and stir-fry for a further minute. Spoon into a mixing bowl with the potatoes, season and gently stir together.
Wipe out the pan, then spray with low-calorie spray and return to the heat. Pour in the potato mixture and flatten it using the back of a spoon, so the potatoes sit neatly in the pan. Pour over the eggs, making sure it covers the potato and runs down any gaps to reach the bottom of the pan. Reduce the heat to low and gently simmer for 20-25 minutes.
Once the tortilla is almost cooked (there should be just a little raw egg visible on the top) finish off under a hot grill for 4-5 minutes, or until all of the egg is set.
Remove the pan from the heat. Slice the tortilla into wedges, scatter with the spring onion and serve with salad.
