SW recipe: Taco cheese fries

Serves 4

For the fries:

1.2kg floury potatoes, such as Maris Piper or King Edward, cut into fries
Low-calorie cooking spray
2 tsp smoked paprika
2 tsp garlic granules

For the topping:

500g lean beef mince (5% fat or less)
1 large red onion, finely chopped
3 red peppers, deseeded and finely chopped
1 tbsp ground cumin
½ tsp cayenne pepper
½ tsp cinnamon
¼ tsp ground allspice
1 small chilli, finely chopped
2 garlic cloves, crushed
1 tbsp tomato purée
1 beef stock pot or crumbled stock cube
40g reduced-fat mozzarella, grated
2 tbsp pickled jalapeños, drained and roughly chopped
Fresh coriander sprigs

For the taco sauce:

1½ tsp tomato purée
½ tsp garlic granules
1 tsp smoked paprika
2 tbsp plain quark

To serve:

Lettuce and chopped radish salad
Lime wedges


1 To make the fries, preheat your oven to 200°C/fan 180°C/gas 6. Boil the fries for 3-4 minutes, then drain and leave to steam-dry. Spread on 2 non-stick baking trays in a single layer and spray with low-calorie cooking spray. Sprinkle over the paprika and garlic granules. Cook for 20-25 minutes, turning halfway, or until golden.

2 Meanwhile, for the topping, dry-fry the mince over a medium-high heat until browned all over, then drain off any liquid and set aside. Spray a large, deep, non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and peppers, and fry gently for 8 minutes until softened, stirring frequently. Add the mince, cumin, cayenne pepper, cinnamon, allspice, chilli, garlic, and tomato purée. Stir well, then add the stock and 200ml water. Bring to a simmer and cook for 10 minutes, or until the mince is cooked through and the sauce is thick. (If it starts to dry out, add a splash more water, or if it’s too saucy, keep cooking until it thickens.) Season to taste, then keep warm over a low heat until the fries are cooked.

3 Mix together all the taco sauce ingredients, adding 1-2 tbsp water to loosen it slightly, then set aside. Preheat your grill to high. Transfer the chips to a baking dish, then top with the mince mixture. Evenly scatter over the mozzarella and grill for 2 minutes, or until the cheese has melted. Drizzle over the taco sauce and top with the jalapeños and coriander. Divide between 4 bowls and serve with the salad and lime wedges for squeezing over.
