SW recipe: Tagliatelle Bolognese

Ready in 1 hour 30 minutes


500g lean beef mince (5% fat or less)
1 onion, finely chopped
1 large carrot, finely diced
2 celery sticks, finely diced
4 smoked bacon medallions, visible fat removed, finely diced
2 garlic cloves, crushed
2 tsp dried mixed Italian herbs
1 tsp dried rosemary
2 x 400g cans chopped tomatoes
1 beef stock cube, crumbled
2 tbsp tomato purée
125ml red wine
1 tbsp red wine vinegar
350g dried tagliatelle
Mixed-leaf salad, to serve
20g fresh Parmesan, grated


1 Dry-fry the mince in a non-stick frying pan over a medium-high heat until browned. Drain off any liquid, then tip into a large, deep saucepan or flameproof casserole dish.

2 Add the onion, carrot, celery, bacon and garlic to the frying pan with 100ml water. Reduce the heat to medium and cook for 15 minutes until the veg are very soft and the bacon is cooked, stirring occasionally.

3 Add the veg mixture to the mince and place the pan or dish over a medium heat. Add the herbs, tomatoes, stock cube, tomato purée, red wine, vinegar and 200ml cold water. Simmer gently over a low heat for 1 hour.

4 Cook the tagliatelle according to the pack instructions, then drain and tip into the sauce. Season and toss to combine. Divide between 4 plates with the salad, then top each portion of tagliatelle with a quarter of the Parmesan.
