Serves 4 (burgers only) Ready in about .50 minutes
4 sweet potatoes, cut into wedges
Low-calorie cooking spray
Salt and freshly ground black pepper
500g lean turkey mince (5% fat or less)
2 level tbsp Thai yellow or red curry paste
4 spring onions, chopped
1 red chilli, deseeded and finely chopped
1/2 red onion, cut Into rings
Finely grated zest and juice of 1 lime
2 tsp rice wine vinegar
1 tsp sweetener
4 level tbsp extra-light mayonnaise
4 x 60g wholemeal rolls, split and toasted
1 little gem lettuce, shredded
1 small ripe fresh pineapple, peeled, sliced and core removed
Mixed-leaf salad, to serve
1 Preheat your oven to 200°C/fan 180°C/gas 6. Toss the sweet potatoes in low-calorie cooking spray, season with salt and spread on a non-stick baking tray in a single layer. Bake for 35-40 minutes, or until crisp and golden, turning halfway.
2 Meanwhile, mix the turkey mince with the curry paste, spring onions and chilli. Season and shape into 4 burgers. Mix together the red onion, lime juice, rice wine vinegar and sweetener, then set aside to pickle, turning the onion occasionally. Mix the mayonnaise with the lime zest.
3 When the wedges have 10 minutes to go, place a frying pan over a high heat. Cook the burgers for 3-5 minutes on each side, or until cooked through.
4 Spread the base of each roll with a quarter of the lime mayo, top with shredded lettuce, then follow with a pineapple slice, a burger, some pickled red onions and the roll lid. Serve with the sweet potato wedges and mixed-leaf salad on the side.
