SW recipe: Thai Turkey Noodles

Serves 4 Syns per serving: FREE

Ingredients:

Low-calorie cooking spray

650g sliced veg e.g. courgettes, red pepper, onions and baby corn

2 x 225g tins water chestnuts, drained

250g cooked turkey, roughly shredded

2tbsp soy sauce

3tbsp fish sauce

75g root ginger, coarsely grated

Finely grated zest and juice 2 limes, plus extra wedges to serve

2 lemongrass stalks, outer layer removed and stalks finely chopped

4 garlic cloves, crushed

250g medium egg noodles

100g coriander, roughly chopped

1 red chilli, finely sliced

250g egg noodles

Method:

Heat a large wok or deep frying pan over a medium-high heat and spray with low-calorie cooking spray. Once the pan is hot, add the veg, turkey and water chestnuts and stir-fry for 3-4 minutes until they have some colour.

Put the noodles on to cook according to pack instructions. To make the sauce, stir all the ingredients together and add to the pan. Toss the veg and meat in the sauce for 2-3 minutes until everything is piping hot and softened. Drain the noodles and divide between bowls, then stir the coriander and chilli through the veg and top the noodles with the stir-fry.

Serve immediately, with lime wedges for squeezing.
