SW recipe: Tiramisu terrine

Serves 8
Syns per serving 2½
Ready in 30 minutes, plus chilling


2 x 11g sachets light instant hot chocolate

14 sponge fingers, halved (there’ll be half a sponge finger leftover)

150ml strong black coffee, made with 2-3 tsp instant coffee

1 sachet gelatine powder

250g plain quark

300g fat-free natural Greek yogurt

2 level tbsp sweetener granules

1 tsp vanilla extract


1 Line the length of a non-stick, 1-litre loaf tin with a long strip of baking paper, so it hangs over the top of the tin at each end. Sprinkle 1 hot chocolate sachet evenly over the base of the tin.

2 Lay three rows of 3 sponge finger halves lengthways on the base, then drizzle over 1 tbsp coffee. Reserve 2 tbsp coffee, then pour the remainder into a saucepan with the gelatine. Gently warm through over a low heat, stirring continuously, until the gelatine has dissolved.

3 Pour the coffee and gelatine mixture into a bowl. Add the quark, yogurt, sweetener and vanilla extract, then beat together until smooth.

4 Spoon half of the quark mixture over the sponge fingers, then cover with another three rows of 3 sponge finger halves. Drizzle over 1 tbsp coffee, followed by half of the remaining hot chocolate sachet. Top with the remaining quark mixture, then a final layer of sponge finger halves. Drizzle over the remaining coffee, cover and chill for at least 6 hours, or overnight.

5 To serve, dip the base of the tin in hot water for a few seconds. Put a serving dish over the tin, turn it upside down and carefully lift off the tin, pulling very gently on the ends of the baking paper to help loosen it if you need to. Discard the baking paper. Evenly sprinkle over the remaining hot chocolate and cut into 8 equal slices.

Keep the tiramisu in the tin in the fridge until ready to serve. If it sticks in the tin when you turn it upside down, use a flat-bladed knife to gently prise the sides away from the tin – getting a little air in between the terrine and the tin means it should come out cleanly
