SW recipe: Tomato and olive pasta

Ingredients

Low-calorie cooking spray

1 small onion, finely chopped

1 celery stick, finely diced

1 garlic clove, crushed

227g can chopped tomatoes

8 pitted black olives in brine, drained and halved

125g frozen spinach, defrosted and drained in a sieve

100g dried pasta spirals

Method

1 Spray a lidded, non-stick frying pan with low-calorie cooking spray and place over a low heat. Add the onion, celery and 1 tbsp water. Cover and cook for 8 minutes until the onion and celery are softened, stirring occasionally.

2 Uncover, add the garlic with a splash of water and cook for 1 minute. Add the tomatoes, then fill the can with water and pour into the pan. Stir well to combine, season and bubble gently for 10 minutes uncovered, stirring occasionally.

3 Cover again and cook for 5 minutes. Add the olives and spinach, re-cover and cook gently for 3 minutes until the spinach is warmed through. Meanwhile, cook the pasta according to the pack instructions, then drain.

4 Add the pasta to the sauce. Stir to coat, then spoon into a bowl and top with a twist of black pepper to serve.
