Ready in 50 minutes
- 500g lean turkey mince (5% fat or less)
- ½ small pack fresh basil, finely chopped, plus leaves to serve
- 1 tsp dried oregano
- 3 level tbsp freshly grated
- Parmesan cheese, plus 1 level tbsp to serve
- Low-calorie cooking spray
- 1 large onion, finely chopped
- 2 garlic cloves, crushed
- 2 tbsp tomato purée
- 2 x 400g cans chopped tomatoes with herbs
- 750ml boiling chicken stock
- 100g dried linguine or spaghetti, broken into 5cm lengths
Put the turkey, basil, oregano, Parmesan, ½ tsp salt and some black pepper in a large bowl and mix well with clean hands. Shape the mixture into about 36 little meatballs.
Spray a large non-stick saucepan with low-calorie cooking spray and place over a medium-high heat. Add half the meatballs and fry for 2-3 minutes, turning them as they brown. Transfer to a plate and repeat with the remaining meatballs.
Add the onion and garlic to the pan along with 3 tbsp water. Cover and cook over a low heat for 10 minutes or until the onion is soft. Uncover the pan and stir in the tomato purée, chopped tomatoes and stock. Bring to the boil over a high heat then reduce the heat to low and simmer for 10 minutes. (If you prefer a smooth soup, purée with a stick blender or use a liquidiser and return to the pan.)
Add the linguine or spaghetti and simmer for 10 minutes. Add the meatballs and simmer for 5 minutes or until the meatballs and linguine or spaghetti are cooked through. Season to taste.
Ladle the soup and meatballs into bowls, scatter over the basil leaves and remaining Parmesan and serve hot.
