serves 4 Fret ready in 3 hours
1 large onion, roughly chopped
10 garlic cloves, roughly chopped
75g root ginger, peeled and roughly chopped
low calorie cooking spray
2 Scotch bonnet chillies
8-10 curry leaves
3 thyme sprigs
4 tbsp mild curry powder
salt and freshly ground black pepper
800g lean stewing beef, visible fat removed, cut into chunks
400g can chopped tomatoes
300g small Charlotte potatoes, peeled
400ml boiling beef stock
400g green beans, cut into 3cm lengths
2 x 400g cans black-eyed or pinto beans (or use a mixture)
juice of 1/2 lemon
Put the onion, garlic and ginger in a food processor and blend to a puree. Spray a large heavy-based non-stick saucepan with low calorie cooking spray and place over a medium heat. Add the onion mixture and cook for 5 minutes or until softened. Add the whole chillies. curry leaves, thyme. curry powder and 2 teaspoons of salt. Cook for 2-3 minutes or until fragrant. Turn the heat to medium-high, add the beef and cook for 5 minutes or until browned. Add the tomatoes. potatoes and stock. Bring to the boil over a high heat and cook for 10 minutes.
Reduce the heat to low, cover tightly and simmer gently for 2 and 1/2 hours, removing the lid for the final 30 minutes of the cooking time so the sauce can reduce and thicken.
Add the green beans and canned beans for the final 5 minutes then remove from the heat. Stir in the lemon juice, season to taste and serve hot with your favourite rice.
