For the syrup:
Zest and juice of 1 lime
Juice of 1 lemon
1 tsp ground ginger
2 level tbsp sweetener granules
25ml coconut or dark rum
For the fruit salad:
300g fresh mango flesh, cut into cubes
300g fresh pineapple flesh, cut into cubes
200g black seedless grapes
3 large kiwi fruit, peeled and cut into cubes
100g pomegranate seeds
2 sheets edible gold leaf, to decorate
1 Put all the syrup ingredients in a saucepan and heat over a low heat for 2-3 minutes, or until the sweetener has dissolved. Remove from the heat and leave to cool.
2 Put the fruit into a large, wide bowl and pour over the cooled syrup. Toss well to coat evenly. Carefully decorate some of the fruit with the gold leaf. Divide the fruit salad and syrup between 4 bowls to serve.
