SW recipe: Turkey and Tarragon Cheeseburgers

Serves 4, ready in 30 minutes, plus chilling

Ingredients:

• 1 slice of wholemeal bread from a small 400g loaf

• 500g turkey breast fillet or turkey breast steak, cut into large chunks

• 1 garlic clove, crushed

• 1 shallot, roughly chopped

• A small handful of fresh tarragon leaves

• 180g fat-free natural cottage cheese

• 25g reduced-fat Cheddar cheese, grated

• Low-calorie cooking spray

• 4 x 60g wholemeal rolls

• 4 crisp lettuce leaves

• 2 tomatoes, sliced

• ¼ cucumber, sliced

• A small handful of snipped fresh chives

• Extra salad, to serve

Method:

1 Put the slice of bread into a food processor, whizz into breadcrumbs and tip into a bowl. Add the turkey to the processor with the garlic, shallot and tarragon and whizz until roughly chopped.

2 Return the breadcrumbs to the processor and season to taste. Whizz briefly until well mixed then transfer to a bowl. Divide into four portions, shape each one into a burger and chill for at least 1 hour.

3 Mix the cottage cheese and Cheddar in a bowl and chill. Spray the burgers with low calorie cooking spray and cook under a medium-hot grill for 15 minutes or until cooked through, turning once. Slice open the rolls and toast cut-side up on the grill for 30 seconds to 1 minute until golden. Fill each roll with lettuce, tomato, cucumber and a burger, finishing with a dollop of the cottage cheese topping. Sprinkle over the chives and serve hot with extra salad.

And so you never feel deprived you can enjoy limited amounts of treats which are higher-calorie, less filling foods that include chocolate, crisps and alcohol.
