SW recipe: Turkey, bacon and leek carbonara

Serves 4
Syns per serving – FREE

Ingredients:

4 rashers lean smoked bacon (visible fat removed)
1 leek
200g leftover, cooked turkey (visible fat removed)
1 tsp mustard powder
4 tbsp fat-free fromage frais or Quark
2 eggs
200g (dried weight) cooked spaghetti
fresh parsley

Method:

Cook the spaghetti according to pack instructions, drain and set aside.
Place a large, non-stick frying pan over a medium heat and cook the bacon and leek for 4-5 minutes. Add the cooked turkey and warm through. Add the mustard powder to a little water and mix in the quark and eggs. Season and beat well.
Add the cooked spaghetti to the pan along with the egg mixture and warm through for 3-4 minutes. Scatter over chopped fresh parsley and serve straight away.
