SW recipe: Turkey kofta curry


500g lean turkey mince (5% fat or less)

3 garlic cloves, crushed

1 tbsp cumin seeds

1 tbsp mild chilli powder

3 tsp turmeric

low•calorie cooking spray

2 large onions, diced 400g potatoes, peeled and cut into bite.size chunks

2 tbsp medium curry powder

400g can chopped tomatoes

500ml hot chicken stock

125g frozen peas

150g green beans, halved


1 Preheat your oven to 200t/fan 180t/gas 6.

Put the turkey mince, garlic, half the cumin seeds, the chilli powder and 2 tsp turmeric in a mixing bowl and mix together using your hands.

Roll into 20 meatballs and spread on a non-stick baking tray. Spray with low-calorie cooking spray and bake for 20 minutes, or until golden and cooked through.

2 Meanwhile, place a large, non-stick frying pan or shallow, flameproof casserole dish over a medium-high heat. Add the onions with a mug of water and cook for 5 minutes until the onions are soft and the water has evaporated. Stir in the potatoes, curry powder and remaining cumin seeds. Cook for 1 minute, then stir in the tomatoes, remaining turmeric and the stock.

Simmer for 20 minutes, or until the potatoes are tender and the sauce is thick.

3 Stir in the frozen peas. green beans and baked turkey koftas. Cook for a further 5-6 minutes, then serve.
