SW recipe: Turkish cinnamon chicken with herb

Serves 4 Ready in about 45 minutes, plus marinating


1 tsp ground cinnamon

1 tbsp sweet smoked paprika

1 tsp ground cumin

2 garlic cloves, crushed

8 skinless chicken thighs, on the bone

Low-calorie cooking spray

1 onion, diced

3 mixed peppers, deseeded and diced

1 small courgette, diced

For the relish:

2 garlic cloves, crushed

1 mild green chilli, deseeded and roughly chopped

Small pack each of fresh coriander and fresh mint, roughly chopped

2 tbsp cider vinegar

1 tomato, finely diced


1 To make the marinade, mix the cinnamon, paprika, cumin and garlic in a wide bowl. Season well.

2 Using a sharp knife, make small slits all over the chicken and add to the marinade, turning several times to coat. Cover the bowl with cling film and leave the chicken to marinate in the fridge for 2 hours, or overnight if you can.

3 Preheat your oven to 180°C/fan 160°C/gas 4. Put the chicken in a nonstick roasting tin. Cook for 25-30 minutes, or until cooked through.

4 Meanwhile, for the relish, put the garlic, chilli. coriander and mint in a pestle and mortar and grind together. Gradually add the cider vinegar to make a paste – it should be chunky, not pureed. Stir in the tomato.

5 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Stir-fry the onion, peppers and courgette for 4.5 minutes until tender. Season and serve with the chicken and relish.
