EVERYDAY EASY
Serves 4 (burgers only) Ready in about 1 hour

Ingredients:

200g carrots, peeled and coarsely grated

100g butternut squash flesh, coarsely grated

800g large potatoes, such as Desiree or King Edward, peeled and cut into thick chips

Low-calorie cooking spray

400g can chickpeas, drained and rinsed

1 garlic clove, crushed

1 tsp ground cumin

1/2 tsp ground cinnamon

1/2 tsp sweet smoked paprika

2 tbsp finely chopped fresh coriander leaves

1 medium egg, beaten

4 x 60g wholemeal rolls, split

4-6 baby gem lettuce leaves, roughly torn

2 tomatoes, sliced Green salad, to serve

For the mayo:

8 tbsp fat-free natural yogurt

2 level tbsp extra-light mayonnaise

1 garlic clove, crushed

2 tbsp finely chopped fresh coriander leaves

Method:

 

1 Preheat your oven to 200°C/fan 180°C/gas 6. Boil the carrots and butternut squash for 8.10 minutes, or until tender. Drain well in a sieve, squeezing out any excess liquid, and transfer to a large food processor.

2 Parboil the chips for 4-5 minutes, then drain well. Spread on a large, non-stick baking tray in a single layer and spray with low-calorie cooking spray. Season and set aside.

3 Meanwhile, add the chickpeas, garlic, spices, coriander and egg to the food processor and whizz until fairly smooth. Season, then shape the mixture into 4 burgers. Transfer to a non-stick baking tray and spray with low-calorie cooking spray. Bake the chips on the top shelf, with the burgers underneath, for 25-30 minutes, turning the chips halfway, until golden.

4 Mix together the yogurt, mayo and garlic in a small bowl, then sprinkle over the coriander and season with freshly ground black pepper. Fill each roll with baby gem lettuce leaves, tomato slices, a burger and a quarter of the garlic mayo. Serve with the chips and green salad.
