4 skinless chicken breasts, cut into small chunks
1 large red onion
1 garlic clove, crushed
1 tsp chopped fresh rosemary
250g cherry tomatoes
small bag of salad leaves
1/2 cucumber deseeded and sliced
400g can of white beans such as cannellini, drained and rinsed
1 tbsp balsamic vinegar or to taste
Preheat the oven to 200c, fan 180c, gas 6
Put the chicken in a bowl with the onion wedges, rosemary, garlic and some seasoning and spray with low calorie cooking spray. Toss well and spread out on a non stick baking tray and roast for 10-15 minutes.
Remove from the oven and add the cherry tomatoes and cook for a further 10 minutes until the chicken is cooked through.
Put the salad leaves into a large serving bowl and scatter over the cucumber and beans. Top with the warm roast chicken and vegetables and drizzle over the balsamic vinegar and serve straight away.
Crumble 50g of reduced fat feta cheese over the salad for an extra tasty dish. (adds 1 syn per serving)
