- Low-calorie cooking spray
- 50g caster sugar
- 200g fresh strawberries, hulled, plus a few whole strawberries to decorate
- 3 large egg whites
- 1 tbsp sweetener
- 1 level tsp icing sugar, to dust
1 Preheat your oven to 190°C/ fan 170°C/gas 5. Lightly spray 4 individual ramekins or soufflé dishes with Fry Light, then evenly coat the insides with a little of the caster sugar, tipping any excess onto a plate and setting aside.
2 Put the strawberries in a food processor and whizz until puréed. Beat the egg whites in a clean, glass bowl using an electric hand whisk on a medium speed until they form stiff peaks when the blades are lifted. Whisk in the sweetener and remaining caster sugar a little at a time. including any excess from step 1, until thick and glossy.
3 Using a metal spoon, carefully fold in the strawberry purée. then spoon into the prepared dishes. Bake in the centre of the oven for 12-14 minutes, or until risen and just browned. Lightly dust with icing sugar and serve immediately with the extra strawberries.
