SW recipe: White chilli chicken

Serves 4
Ready in about 45 minutes


Low-calorie cooking spray

2 large onions, finely diced

2 celery sticks, diced

2 garlic cloves, crushed

2 tsp dried cumin

1/2 tsp cayenne pepper

2 tbsp pickled sliced jalapeños in brine, drained and finely chopped

1 fresh green jalapeno chilli, finely chopped, plus extra to serve

2 tsp dried oregano

500g boneless and skinless chicken breasts, cut into 2cm chunks

600ml hot chicken stock

2 x 410g cans white cannellini beans, drained and rinsed

1 cauliflower, broken into small florets

2 spring onions, thinly sliced

4 tomatoes, deseeded and finely chopped (optional)


1 Spray a non-stick saucepan with low-calorie cooking spray and place over a medium heat. Stir-fry the onions and celery for 4-5 minutes or until softened. Add the garlic. cumin and cayenne and stir-fry for a further 1-2 minutes.

2 Add all the jalapenos, the oregano. chicken and stock, then increase the heat to high and bring to a simmer. Reduce the heat to low, cover and cook gently for 10-15 minutes. or until the chicken is cooked through.

3 Add the beans and cauliflower and cook gently for a further 10-15 minutes. Season to taste and ladle into 4 shallow bowls. Serve topped with the onions and tomatoes.

MAKE IT VEGAN Simply swap the chicken for Quorn vegan pieces and the stock to Kallo vegetable stock to make the recipe suitable for vegans.
