SW recipes: Sausage with carrot-bean mash & tomato sauce

8 frozen Slimming World Pork Sausages
500g passata
Splash of Worcestershire sauce
2 garlic cloves, crushed
3 tbsp tomato purée
25g fresh flat-leaf parsley or basil, chopped, reserving some to serve
6 large carrots, peeled and cut into cubes
400g can butter beans, drained and rinsed
100ml hot vegetable stock
1 sweetheart cabbage, halved, cored and roughly chopped or sliced


1 Cook the sausages according to the pack instructions. Meanwhile, put the passata in a small saucepan with the Worcestershire sauce, garlic, tomato purée and herbs. Bring to the boil, then simmer gently for 15 minutes, stirring occasionally, until thickened. Season to taste.

2 While the passata is simmering, boil the carrots for 12-15 minutes, or until just tender, then drain. Transfer to a bowl with the butter beans and stock. Roughly mash, season to taste and cover to keep warm. Boil the cabbage for 3-4 minutes, or until just tender, then drain.

3 Divide the mash, sausages, cabbage and tomato sauce between 4 plates. Scatter over the reserved parsley or basil, add a twist of black pepper and serve.
