SW reipe: Cajun fishcakes with wedges

Serves 4
Ready in 1 hour 30 minutes, plus cooling and chilling


600g sweet potatoes, peeled and cut into chunks

500g skinless and boneless white fish fillets, such as cod or haddock

1 level tbsp Cajun spice mix (see Cook’s note)

4 spring onions, finely sliced

25g fresh coriander, finely chopped

1kg floury potatoes, such as Maris Piper or King Edward, cut into wedges

Low-calorie cooking spray

250g each cooked thin-stemmed broccoli and green beans, to serve


1 Steam the sweet potatoes for 10 minutes in a steamer pan or a steamer insert set into a large, lidded saucepan. Place the fish fillets directly on top of the potatoes and steam for a further 5 minutes, or until both are cooked through. Tip into a bowl and mash with a fork. Stir in the Cajun spice mix, spring onions and coriander, and season. When cool enough to handle, shape into 8 fishcakes. Place on a large, non-stick baking tray and leave to cool. Cover and chill for 30 minutes, or overnight.

2 When ready to cook, preheat your oven to 200°C/fan 180°C/gas 6. Spread the wedges on a large, non-stick baking tray in a single layer and spray with low-calorie cooking spray. Season and cook for 40-50 minutes, or until golden, turning halfway.

3 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Fry the fishcakes for 2-3 minutes. Spray with a little more low-calorie cooking spray, turn over and fry for a further 2-3 minutes until piping hot. You may need to do this in batches and keep the fishcakes warm until they’re all cooked. Serve the fishcakes with the wedges and veg.

When cooking with shop-bought spice mixes/blends, choose brands without Synned ingredients like sugar, flour and oil. Otherwise, count ½ Syn per level tsp or 1½ Syns per level tbsp.
