SERVES 4 READY IN ABOUT 1 HOUR
Ingredients:
3 skinless chicken breast fillets, thinly sliced
Finely grated zest and juice of 1 lime
1 tbsp dried oregano
1 tsp smoked paprika
2 tsp ground cumin
1 tsp cayenne pepper
1/2 tsp ground cinnamon
Salt and freshly ground black pepper
1 red onion, thinly sliced
2 red peppers, deseeded and thinly sliced
2 courgettes, cut Into thin batons
100g mushrooms, thinly sliced Cheat’s ‘sour cream’, to serve
Tomato, herb and lime salsa to serve
4 taco shells
For the paprika wedges:
4 baking potatoes, cut into thick wedges
Frylight
1 tbsp smoked paprika
For the salad:
1 iceberg lettuce, shredded
1 cucumber, halved and thinly sliced
6 tbsp Hellmann’s Fat Free Vinaigrette
Method:
1 Preheat your oven to 200°C/fan 180°C gas 6. Put the chicken in a wide bowl with the lime zest and juice, the oregano and the spices then season, toss well, cover and chill for 20-30 minutes.
2- Meanwhile boil the wedges for 5-6 minutes, drain well return to the pan and leave to steam dry for 30 seconds, arrange the wedges in a single layer on a baking tray lined with baking paper. Lightly spray with Frylight. season with salt and paprika and bake for 25-30 minutes, shaking occasionally, until lightly golden.
3 Place a large frying pan sprayed with Frylight over a high heat. Stir-fry the chicken for 5-6 minutes, or until browned. Add the onion. peppers, courgettes and mushrooms. Stir-fry for a further 5-6 minutes, or until the chicken is cooked through and the vegetables are tender
4 Put all the salad ingredients in a bowl. toss well and season with black pepper. To serve, spoon a little ‘sour cream’ and salsa into each taco, then add the chicken mixture. Serve immediately with the salad, wedges and any remaining chicken mixture.

PUSH THE BOAT OUT Replace the taco shells with flour tortillas – griddle for a few seconds over a medium-high heat before filling, and count 6 Syns per tortilla
